Dried Apricots In Verjuice Syrup

Step 1: Place the honey, sugar, verjuice, water and rosemary in a medium-sized pan and bring to simmer to ensure sugar has been dissolved.

Step 2: Add the apricots and cook them for 2 to 3 minutes to plump and soften.

Step 3: Remove the apricots from the pan and set aside, continue to reduce the liquid until it is a syrup consistency (approx 2 Tbsp).

Step 4: Remove from the heat and add the apricots back into the syrup and set aside to cool.


  1. 6 tbspn honey
  2. 200ml water
  3. 2 sprigs rosemary
