Dried Peach, Pear & Almond Panforte

Step 1: Pre-heat a fan forced oven to 180C.
Step 2: Place the almond flakes onto a baking tray and place into pre-heated oven, baking for 8-10 minutes or until golden brown. Remove from the oven and spread out onto a tray to cool.
Step 3: Place the peaches, pears, ginger & rosemary and browned almond flakes into a large mixing bowl and mix together well.
Step 4: Place the honey, lemon juice & brown sugar into a small pot over a high heat. Bring to the boil to dissolve the brown sugar, then remove from the heat and pour into the peach mixture. Stir together well.
Step 5: Place two sheets of the rice paper onto a tray, then evenly pour over the fruit mixture and place the remaining 2 sheets of rice paper on top of the fruit. Place a piece of baking paper on top and weigh down with a flat tray and weights.
Step 6: Allow to sit over night to set, then remove the weights and cut into finger size portions to serve.
100g almond flakes
200g dried peaches finely chopped
75g dried pears finely chopped
25g glace ginger finely chopped
1 tspn fresh rosemary finely chopped
3 tbspn honey
1 tbspn lemon juice
2 tbspn brown sugar
4 sheets edible rice paper
