Maggie's Heirloom Tomato Salad

Step 1: Place tomatoes into a mixing bowl and drizzle with the Vino Cotto, set aside to marinate for 15-20 minutes.

Step 2: Arrange tomatoes on serving dish.

Step 3: Drizzle over the Extra Virgin Olive Oil and gently toss it together. Season to taste with sea salt & freshly cracked black pepper.

Step 4: Place basil leaves on top just before serving.

  1. 6 ripe heirloom tomatoes cut into different shapes
  2. 40ml 2 tbspn Vino Cotto
  3. To taste sea salt
  4. 1/2 cup basil torn
