Roasted Olives with Herbs and Preserved Lemon

Step 1: Preheat the oven to 200C (180C fan-forced).
Step 2: Line a small oven tray with baking paper.
Step 3: In a medium bowl, place the oil, olives, herbs and preserved lemon. Mix together to coat the olives with oil, then place the olives onto the prepared tray.
Step 4: Roast the olives for 15 minutes then set aside to cool to room temperature.
Step 5: Season to taste with black pepper to serve.
60ml 1/4 cup Extra Virgin Olive Oil
1 1/2 cups kalamata olives stones in
2 tbspn fresh rosemary leaves stripped
2 tbspn lemon thyme
2 wedges preserved lemon rind washed and cut into strips (discard pulp)
To taste freshly cracked black pepper
