Mushrooms with Verjuice

Step 1: Wipe mushrooms with a damp cloth to remove any dirt.
Step 2: Melt the butter in a heated fry pan and add the thyme and sliced mushrooms sautéing them for 2 minutes.
Step 3: Add the Verjuice and cook for a further 2 minutes. Season with salt and pepper to taste.
100g unsalted butter
1.0kg swiss brown mushrooms
120ml 1/2 cup Verjuice
1/4 cup fresh thyme
To Taste sea salt flakes
To Taste freshly cracked pepper
