Vino Cotto Golden Shallots

Step 1: Preheat a fan forced oven to 200°C.

Step 2: Place the golden shallots into a bowl with a little extra virgin olive oil to coat. Place on a baking tray. Put into the pre-heated oven and roast for 30 - 40 minutes or until the shallots soften and cook all the way through.

Step 3: Remove the golden shallots from the oven. Place a medium size non-stick pan over a high heat, once this is hot add the shallots, sprigs of thyme, Vino Cotto and a pinch of salt flakes and sauté for 2 to 3 minutes until they have caramelized and gone all sticky.

Step 4: Add balance of Extra Virgin Olive Oil away from heat. Serve warm or at room temperature.


  1. 250g 10 golden shallots whole and peeled
  2. 3 sprigs thyme
  3. 40ml 2 tbspn Vino Cotto
  4. 1 pinch salt flakes
