A batch of Maggie's apricot jam Labneh is easy to whip up and provides a protein-packed breakfast full of the sweetness of apricots.

500g natural yoghurt
60ml apricot jam

Place the yoghurt and jam into a large bowl and mix together well.

Line a medium size sifter or strainer with the muslin cloth and place it over a bowl. Pour the yoghurt mixture into the muslin lined strainer, then bring all the edges up together and tie with string.

The following day, remove the yoghurt mixture from the muslin cloth, discarding of any draining liquid.

Divide evenly across 4 plates and serve with Maggie's Roasted Granola and seasonal fresh fruit.
