Preheat a fan forced oven to 200C.

Place the brie onto a lined baking dish, spoon the mustard pears on top and spread evenly over the brie. Place into the preheated oven to bake for 10 minutes, then remove and allow to sit for 5 minutes.

Place the brie onto a serving plate, drizzle with olive oil and sprinkle over the thyme leaves. Serve with melba toast or flatbread.
