Mustard Apricots with Smoked Chicken Recipe

This fresh rocket and avocado salad is thick with smoked chicken breast and a homemade dried mustard apricot dressing.

200g smoked chicken breast skin on
200g ripe avocado
75g rocket full leaf (not wild and wiry)
You'll need to make:
50g Dried Mustard Apricots
15g flaked almonds
10ml Aged Red Wine Vinegar
1/4 tspn dijon mustard
40ml mustard syrup

Thinly slice chicken breast and cube avocado.

In a bowl combine chicken, mustard syrup, rocket, avocado, mustard apricots and almonds, toss to combine.

In a separate bowl prepare the dressing by combining Red Wine Vinegar, Vino Cotto, Extra Virgin Olive Oil and Dijon Mustard.

Plate up chicken, drizzle with dressing and serve.
