Rack of Lamb with Quince Glaze Recipe

100ml Verjuice
900g lamb rack approximately 6 cutlets in each

Preheat oven to 200C.

Combine Quince Paste, Verjuice and Extra Virgin Olive Oil and heat gently in microwave or on the stove.

Score the fat and season lamb with Extra Virgin Olive Oil, salt and pepper.

4Heat large frying pan and seal lamb. Place meat onto oven tray and brush with glaze.

Cook in oven for 30 minutes or until cooked to your liking. Remove and rest lamb for 10 – 15 minutes before serving.
