Dried Fruit Compote Recipe

Try Maggie's dried fruit compote recipe on a bed of vanilla ice cream. The apricots, Verjuice and cinnamon make it fruity and oh-so-sweet.

375ml verjuice or Verjuice
1 tspn honey
3 cup sugar
1 cinnamon stick
6 cloves whole
3 cup mixed dried apricots, pears and pitted prunes coarsely chopped
375ml cold water
1 1 tspn pure vanilla extract
500ml Rich Vanilla Bean Ice Cream to serve

In a large saucepan, combine the Verjuice, honey, sugar, cinnamon stick and cloves and bring to a boil over high heat. Simmer over low heat for 10 minutes.

Add the dried fruits, water and vanilla extract and then bring to a boil. Simmer over low heat until the fruit is plump and the liquid is slightly syrupy, about 25 minutes.

Discard the cinnamon stick and cloves. Spoon the warm fruit and syrup over ice cream and serve.
