1 medium sized watermelon
600g large green prawns weight in shell
20ml Verjuice

Methods

Peel watermelon and cut into segments.

Boil a saucepan of water and reduce to simmer. Poach prawns for two to three minutes. Leave to cool and then peel and remove the vein from the back of the prawn.

Drizzle over Verjuice to dress the prawns.

Remove strips of lemon zest using a peeler making sure to only use zest and not the white of the lemon. Poach in hot water for one to two minutes to soften and allow to cool before slicing into thin strips.

Combine watermelon, prawns, lemon zest and sprinkle with the Feta. Dress with the Extra Virgin Olive Oil and add lemon thyme to garnish.
