Methods

Preheat a deep fryer to 180C.

Rinse the tentacles and pat dry with kitchen towel.

Place the tentacles into the plain flour and coat well, then shake to remove any excess flour.

Place the tentacles into the deep fryer and cook for 1 minute, then remove and place onto kitchen towel to drain. Fry the tentacles in 3 batches so that you don’t overcrowd the basket.

Season with sea salt and freshly ground white pepper and serve immediately with Verjuice Mayonnaise and fresh lemon.

Tip: Specialty seafood stores should sell tentacles, however if you can’t find them, you can substitute with sliced squid tubes. If you don't have a deep fryer, place 2L of grapeseed oil into a large pot and place over a high heat. Bring the temperature up to 180C (use a digital thermometer), then turn the heat down slightly to ensure that the oil does not get too hot.
