I just love the beautiful flavour of beetroot, especially when it's in a fresh salad with a little goats cheese! My tip to 'gild the lily', as I love to do, is once you have boiled your beetroot, quickly pan fry it with a little extra virgin olive oil and vino cotto. Happy Cooking!
