"During my tenure as Senior Australian of the Year, I was so proud to be asked to make our nation’s first ever Constitution Cake. I presented the cake on Constitution eve at the High Court in Canberra, and spoke of the thinking behind the making of the cake. I wanted to bring together the beautiful flavours of our native fruits (the Davidson’s plums, quandongs and muntries) that marry so well with the dried fruit and almonds of the early settlers, and the crowning glory of the macadamia paste.
