On the menu today with my beautiful fresh figs, a quick bruschetta with mozzarella perfect for lunch or dinner!

Fresh Fig Bruschetta with Mozzarella Ingredients 1 slice stale sourdough bread 1/2 clove garlic 1 tbsp extra virgin olive oil 1 ball fresh mozzarella 1 tsp vino cotto 4 figs, tipped and sliced 1 tsp salt flakes 1 bunch fresh rocket Freshly Ground pepper

Method 1. Grill sourdough on BBQ or stove-top griller 2. Rub half a clove of garlic over the toast while hot and then drizzle with extra virgin olive oil (evoo). 3. Pull apart fresh mozzarella 4. Tip ends of figs and slice in thirds and place on the toast 5. If figs are not fully ripe, lightly drizzle with vino cotto to enhance the flavour 6. Pinch of salt flakes 7. Top with mozzarella 8. Garnish with rocket and a drizzle of evoo 9. Finish with a pinch of salt flakes and cracked pepper
