Maggie Beer

I have to admit perfectly ripe peaches straight from our tree require no more effort than cutting for me to claim the perfect dessert.

However, due to the difficulties of distributing soft stone fruit, unless you have access to a friend’s tree or live local to a great Farmer’s Market, often you can only buy peaches that were picked before they were truly ripe.

In this case, baking is the best way to bring out the most flavour possible. Once peaches have been baked, they can either be consumed warm from the oven with runny cream, or stored in the fridge for a delicious topping over granola or muesli with a dollop of yoghurt. - Maggie
